Almost Raw Vegan Cheese - Formaggio Vegano Quasi Crudo



I must admit that I am not very familiar with the production of vegan cheese, this is the one I prepare on a regular basis. It 'great served with a salad or on a nice slice of bread. I must thank Angela who kindly lent me his beautiful stone cutting in order to take the pictures coming along with this recipe.


Almost Raw Vegan Cheese

Ingredients
  • 1/2 cup cashews
  • 2 tablespoons nutrional yeast
  • 1 teaspoon Dijon mustard
  • 1 teaspoon sea salt
  • 1/2 teaspoon garlic powder
  • 1 tablespoon tajine
  • 1 tablespoon poppy seeds
  • 1 tablespoon sunflower seeds
  • 3 tablespoons lemon juice
  • 1 tablespoon turmeric powder
  • 1 cup water
  • 2 tablespoons agar agar powder
Preparation
  • Place all ingredients except water and agar agar in a food processor and chop until the mixture is fairly smooth.
  • Pour the water in a saucepan then put it on the fire while paying attention not to create lumps. Add the agar agar powder and stir continuously until it starts boiling. Turn off the heat and let cool for 5 minutes.
  • Add one tablespoon of water into the mixture at a time and blend for about 30 seconds. Repeat until all the water is used.
  • Pour the mixture into a bowl and let it cool to room temperature.
  • Put the mixture into the fridge for approximately three/four hours.
  • Turn the bowl on a cutting board and remove the content. Garnish with Tajin, sesame seeds and turmeric. Serve cold or at room temperature, stored in the fridge, preferably in a sealed container.

Devo ammettere che non ho molta dimestichezza con la produzione di formaggi vegan, questo è l'unico che preparo abitualmente. E' ottimo accompagnato con un'insalata oppure con del pane.
Per le foto della ricetta ringrazio Angela che mi ha gentilmente prestato il suo bellissimo tagliere in pietra.

Formaggio Vegano Quasi Crudo

Ingredienti
  • 75 gr di anacardi
  • 2 cucchiai di lievito alimentare in scaglie
  • 1 cucchiano di senape di Dijon
  • 1 cucchiaino raso di sale marino integrale
  • 1/2 cucchiano di aglio tritato
  • 1 cucchiaio di tajin
  • 1 cucchiaio di semi di papavero
  • 1 cucchiao di semi di girasole
  • 3 cucchiai di succo di limone
  • 1 cucchiaio di curcuma
  • 240 ml di acqua
  • 2 cucchiai di agar agar in polvere
Preparazione
  • Mettere tutti gli ingredienti, eccetto l'acqua e l'agar agar, in un tritatutto e tritate fino ad ottenere un composto abbastanza omogeneo.
  • In un pentolino versare l'acqua e accendere il fuoco. Facendo attenzione a non creare grumi aggiungere la polvere di agar agar e mescolare in continuazione fino a bollitura. Spegnere il fuoco e lasciare raffreddare per 5 minuti.
  • Versare un cucchiaio di acqua alla volta nel composto e frullare per circa 30 secondi. Ripetere l'operazione fino all' esaurimento dell'acqua.
  • Versare il composto in una ciotola e lasciare raffreddare a temperatura ambiente.
  • Riporre poi il composto in frigo per almeno tre-quattro ore.
  • Girare la ciotola su un tagliere e staccare il composto. Guarnire con Tajin, semi di sesamo e curcuma. Servire freddo o a temperatura ambiente, si conserva in frigo, meglio se in un contenitore con chiusura ermetica.
